Chimis Especial Customs House Review: Mexican firepower lands at Fullerton’s doorstep (and yes… it started with a bit of a party) and Islifearecipe was invited to Chimis Especial Customs House opening, and for that we are eternally grateful to have been part of the fun and to meet up with our Chimis BFFs, and Ambassadors galore.

We’re yet to officially eat here properly, so this little review is more of the ambience and experience, not so much the food – YET. And this place has ambience eeking out of all of its pores in buckets, it is such a cool location, incredible views, booze to die for, and delicious canapes that we sampled this evening – it just rocks, it really does.

🍹 When ambassadors show up… you know it’s serious

You know a restaurant opening is a big deal when it’s not just influencers and people pretending to understand tequila… but actually have a restaurant so popular it has ambassadors turning up.

The opening of Chimichangas Especial at Customs House brought in the big guns — including our dear friends the Mexican and Venezuelan Ambassadors, alongside the GM of The Fullerton Hotel Singapore. That’s not just a ribbon cutting… that’s practically a diplomatic event plus tacos and tequila.

And fair play — if you’re opening a Mexican restaurant Singapore at one of the most iconic waterfront spots in town, you’d better bring the energy. And mate… they did. Here I am with the most beautiful and incredible Ambassador of VenezuelaJESSICA MARÍA LÓPEZ PIÑA.

You may remember we met Jessica at the Inaugural Singapore Agave Festival held at Chimichanga Vivocity – when Venezuela witnessed the arrival, for the very first time in the history of Asia, of the emblematic Venezuelan spirit known as Cocuy.

And here are two more dear friends of Islifearecipe, and yet another Ambassador: Mexican Ambassador Agustín García-López Loaeza.

📍 Location, location… and a cheeky margarita (or ten) and a must try is the salt and lime lager (WOOF!!!)

Set right at Customs House Singapore, you’re basically dining with:

  • Marina Bay views.
  • Breeze coming off the water.
  • DBS yachts skimming the water.
  • A skyline that leaves you in awe, with alfresco options, even rooftop dining and drinking.
  • Yeah this place is knockout.

FatBeard observations:
We came here for tacostequila, cocuy and to mingle with our mates… but also silently judged is this the best Mexican restaurant Singapore waterfront, and even with it’s ‘other’ Mexican restaurant neighbours a block away, we debated is this the best Mexican food Singapore Marina Bay.

🍸 Drinks: the real co-star of the show

Let’s not pretend — this is half the reason people are here.

  • Margaritas (classic, frozen, dangerous) – easily the best margarita Singapore waterfront.
  • Tequila and Mezcal flowing like the Mexican Ambassador’s expense account was involved.
  • Mexican Cocktails Singapore, that make you stay longer than planned.
  • For me, that salt and lime lager had me hooked the moment I took the first sip… BOOMSKI!!!

One drink turns into three… it just happens here, and then suddenly you’re best friends with the next table, and have asked the waitress to marry you. Many, ‘what happened’ moments, but so many great memories. This is party town in one bayfront location, folks. You have to give it a try.

🎉 The vibe: somewhere between fiesta and finance with all the Banks around

You’ve got:

  • Smart casual crowd.
  • Tourists.
  • Office warriors pretending it’s a “quick drink”.
  • Diplomats casually eating tacos, and smashing back some icy cold libations.

It’s the perfect mix of:
👉 fun.
👉 lively.
👉 slightly chaotic (in a good way).

And because it’s Customs House:
👉 it feels like an occasion… even if it’s just a Thursday (as it was this day – but boy, we partied hard…)

🧠 What makes this place work (and why it’ll last)

Let’s cut through the fluff.

✅ Strong location

You cannot beat this part of town for:

  • Views – off the charts stunning.
  • Accessibility – city centre, so very simple to connnect to.
  • “Impress someone quickly” dinners – this will absolutely be a go to for me for work lunches and dinners now.

✅ Food that people actually want to eat

Not overcomplicated.
Not trying too hard.
Just:
👉 bold.
👉 satisfying.
👉 repeat-order territory.

👉 and all rather affordable…

✅ Built for groups

This place screams:

  • After work drinks.
  • Rooftop birthday parties.
  • Random “we deserve this” nights, when you just need that pick me up moment.

As you’ll see from below. A little later into the night now. Much fun and frolics and new friends made. You can’t help but just have fun here. Great job Chimi’s Crew!!!

💡 FatBeard's Perspective

Singapore has loads of Mexican spots now (in fact there is one literally a few doors down)… but many fall into two camps:

  1. Trying too hard to be fancy.
  2. Playing it too safe.

So, why Chimi’s Especial at Customs House?

👉 It sits nicely in the middle, and they’re proud of it.
👉 Really food food.
👉 Great location.
👉 Proper party atmosphere and vibe

👉 It’s actually fun when you dine and drink here, and that’s a winning formula in my book.

🍽️ Final thoughts (and slight warning)

You’ll very likely come here thinking: “ I’ll just have a quick dinner, and one drink…”

You’ll leave:
👉 Full to the brim.
👉 Tipsy, as tipsy can be.
👉 Calling over the wait staff to book your next visit.

Because that’s what this place does well — it pulls you in, feeds you properly, and makes you stay longer than intended. And with ambassadors showing up on opening night? That’s not hype. That’s confidence, and well deserved confidence because Chimi’s do this so well. They create memories for and with you. Long may they continue to entertain us. Chimi’s Especial Customs House, must be near the top of your: “Where shall we go next…?” list. You won’t be disappointed.
